Ingredients
Blackened Salmon
4 Blue Circle Norwegian Atlantic Salmon fillets
4 tsp mustard
4 tbsp cajun seasoning
olive oil
salt, to taste
Pineapple Mango Salsa
1 c pineapple, cubed
1 c mango, cubed
⅓ c red onion, diced
1 jalapeno, diced
⅓ c cilantro, chopped
1 juiced lime,
1 avocado, diced
salt, to taste

Step 1
Brush 1 tsp of mustard on each salmon fillet. Sprinkle fillets with cajun seasoning, make sure all sides are covered.

Step 2
Heat a cast iron skillet on medium heat. Once the pan is hot, add a drizzle of olive oil. Place the fillets skin side down on the skillet and cook for 3 minutes. Flip and cook the other side for an additional 3 minutes or until the internal temperature reaches 125 degrees.

Serve with rice, the pineapple, mango salsa, and a lime wedge. Enjoy!
Pineapple Mango Salsa
Step 1
Add pineapple, mango, red onion, jalapeno, cilantro, lime juice, avocado, and a pinch of salt to a large bowl. Gently mix until combined.
