Ingredients

6 ears of corn

1 cup jalapeno, diced

1 cup green onion, diced

1 cup cilantro, chopped

3 cup flour

1 cup cornmeal

½ lime, juiced

3 cup cheddar cheese, shredded

1 egg

1 cup whole milk

1 ½ tsp salt

1 tsp pepper

1 tsp paprika

1 tsp garlic powder

1 tbsp butter

1 tbsp olive oil

Directions

Step 1

Cut kernels off the ear of corn and transfer to a large bowl. Add in jalapeno, green onion, cilantro, flour, cornmeal, spices, and cheese. Gently mix together until all is coated with flour and cornmeal. Next add in egg, lime juice, and milk. Gently mix until all ingredients are combined.

3 cup cheddar cheese, shredded

1 cup whole milk

1 ½ tsp salt

1 tsp pepper

1 tsp paprika

1 tsp garlic powder

Step 2

Add butter and olive oil to a pan on medium heat. Once butter is melted and pan is hot, scoop dollops of corn fritter mixture onto pan working in batches of three. Once browned on the bottom (around 3-4 minutes), flip and brown the other side. Set on a plate with a paper towel to soak up excess oil. Sprinkle with flaky salt and enjoy with favorite dipping sauce (we used parsley mayo).
