Ingredients
Medium Rare Steak
2 6 oz filet mignons
1 tbsp canola oil
3 tbsp butter
4 - 5 garlic cloves, peeled and smashed
sprigs of fresh rosemary
salt and pepper, to taste
Rosemary Sauce
4 tbsp butter
½ shallot, finely chopped
3 garlic cloves, minced
1 tbsp fresh rosemary, finely chopped
salt and pepper, to taste
⅓ c heavy cream
1 tbsp dijon mustard
Directions
Medium Rare Steak
Step 1
Remove the steaks from the refrigerator 30-60 minutes before cooking.

Season all sides with salt and pepper.

Preheat oven to 350 degrees.
Step 4
Place a cast iron skillet on medium-high heat.
Step 5
Once hot, add the oil and sear the steaks for 2-3 minutes each. Remove from heat and add in the butter, garlic, and rosemary

Place in the oven using an oven mit. Cook for 3-4 minutes or until the internal temperature is 130-135 degrees for medium rare.

Let rest and cover with foil for at least 5 minutes.

Serve with rosemary sauce and enjoy!
Rosemary Sauce
Step 1
Add butter to a pan on medium heat.
4 tbsp butter
Step 2
Once the butter is melted, add in the shallot and garlic. Sauté until fragrant.
½ shallot, finely chopped
3 garlic cloves, minced

Add in the rosemary and salt and pepper. Cook for 1 minute.
1 tbsp fresh rosemary, finely chopped
salt and pepper, to taste
Step 4
Pour in the heavy cream and dijon mustard. Mix until combined. Cook until slightly thickened.
