Ingredients
4 large egg yolks
½ cup granulated sugar, divided
¾ cup heavy cream
12 oz mascarpone
1 cup water
2 tbsp vanilla syrup
3 tbsp matcha powder
16 lady fingers

Directions
Step 1
Using a sifter, lightly dust the bottom of your mason jars with 1 tbsp of matcha powder

In a large bowl, whip egg yolks and 1/4 c sugar until pale yellow and tripled in volume

In a medium sized bowl, whip cream and remaining 1/4 c of sugar until soft peaks are formed

¼ cup granulated sugar, divided

Add in mascarpone and whip - be careful not to over whip
12 oz mascarpone

Gently fold in mascarpone mixture into egg yolks until well combined
Step 6
Transfer mixture to a piping bag
Step 7
Combine water, vanilla syrup, and matcha powder in a shallow dish

Working one at a time, dip each lady finger into matcha mixture and place them rounded side up at the bottom of the jar - break ladyfingers as needed to cover the bottom of the jar

Step 9
Spread mascarpone mixture on top of lady fingers to create an even layer
Step 10
Repeat with remaining ladyfingers and mascarpone mixture until the jar is filled
Step 11
Dust top layer with extra matcha powder
Step 12
Cover dishes with lids or plastic wrap and let chill 4-24 hours
