Ingredients

1 lb gold potatoes

¼ cup celery, diced

¼ cup red onion

½ pickle, diced

2 tbsp fresh parsley, chopped

2 tbsp dill, choppped

2 tbsp chives, chopped

salt to taste

pepper to taste

¼ cup mayonnaise

¼ cup sour cream

½ tbsp mustard

1 tsp red wine vinegar

1 tsp paprika

Directions

Step 1

Add potatoes to a pot and fill with water until it is 1 inch over the tops of the potatoes. Bring water to a boil and boil potatoes for 10-12 minutes or until fork tender. Strain potatoes and add to an ice bath. Once potatoes have cooled, peel and dice. Set aside

Step 2

While potatoes are cooking, add celery, red onion, pickle, parsley, dill, chives, mayonnaise, sour cream, mustard, vinegar, and salt and pepper and combine. Gently fold in the potatoes and garnish with paprika. Cover and set in fridge for at least 3 hours.
