Ingredients
1 head of cauliflower, cubed
1 sized onion, diced
3 garlic cloves, minced
4 cup vegetable broth
1 ½ cup heavy cream
1 tbsp chives, chopped

salt and pepper

Step 1
Preheat oven to 400 degrees
Step 2
Spread cauliflower on a baking sheet with olive oil and salt
1 head of cauliflower, cubed
Step 3
Place in oven for 25 minutes, flipping halfway
Step 4
Add onion to a pot on medium heat and cook until translucent

Add garlic and sauté for 1 minute

Add broth and cauliflower and bring to a simmer
4 cup vegetable broth
Step 7
Simmer on low for 20 minutes
Step 8
Blend until smooth
Step 9
Add heavy cream, chives, and salt and pepper to taste

Step 10
Garnish with drizzle of heavy cream, truffle oil, croutons, and chopped chives.
