Ingredients
2 filet mignon
6 scallops
2 tsp vegetable oil
1 tbs salt
1 tbs black peppercorn
compound butter
Directions
Step 1
Let filets sit out for about 30 minutes or until room temperature.

Coat each side generously with salt and pepper.

Turn heat on a medium-high setting and grease pan or Blackstone with oil. Cook filets about 4-5 minutes each side for medium-rare or until internal temperature reaches 125°. Remove from heat and let rest for about 8 minutes.

While steak is resting, add more oil to a hot, clean pan or Blackstone and add scallops. After 20 seconds, turn scallops slightly so they don’t stick to surface. Cook for about 1-2 minutes or until a brown crust develops. Flip and cook the other side the same.

Slice steak and place scallops on top then top with compound butter. Let butter melt then serve.
