Ingredients

2 cans of tuna

¼ c celery, diced

¼ c red onion, diced

3 tbsp pickles, diced

⅓ c mayonnaise

1 tsp lemon juice

1 tsp pickle brine

1 tbsp fresh parsley, chopped

1 tbsp fresh dill, chopped

salt and pepper, to taste

4 slices sourdough or seedy bread

slices cheddar cheese

Directions

Step 1

Drain tuna and add to a medium sized bowl. Add in celery, red onion, pickles, mayonnaise, lemon juice, pickle brine, parsley, dill, and salt and pepper. Mix until combined

3 tbsp pickles, diced

⅓ c mayonnaise

1 tsp lemon juice

1 tsp pickle brine

1 tbsp fresh parsley, chopped

1 tbsp fresh dill, chopped

salt and pepper, to taste

Step 2

Spread mayonnaise on one side of each bread slice.

4 slices sourdough or seedy bread

slices cheddar cheese

Step 3

Scoop tuna mixture on side without mayonnaise. Top with cheddar cheese slices. Top with another piece of bread, mayonnaise side up.

Step 4

Heat cast iron (or non-stick) pan on medium heat. Once hot, place sandwich on the pan. Cook until toasted (about 3-5 minutes). Flip and toast the other side.

Step 5

Serve with potato chips and a pickle, enjoy!
