Ingredients

½ white onion, chopped

1 tbs garlic, minced

⅓ cup artichokes, chopped

½ cup cheddar cheese, shredded

¼ cup feta cheese

3 cup baby spinach

1 tbs butter

½ tsp paprika

1 tsp salt

1 black pepper

2 eggs

¼ cup heavy cream

⅓ cup Hellmann's mayonnaise

1 package puff pastry

1 tbs fresh thyme

Directions

Step 1

Preheat oven to 400 degrees.

Step 2

Roll out puff pastry and cut into 4 sections. Set aside.

Step 3

Add butter to a frying pan on medium heat. Saute onion and garlic until translucent. Add baby spinach, artichokes, and spices and cook until the spinach wilts. Remove from heat.

Step 4

In a medium sized bowl, whisk eggs, heavy cream, and mayonnaise. Stir in cheddar cheese and feta cheese.

½ cup cheddar cheese, shredded

¼ cup feta cheese

Step 5

Grease ramekins and place puff pastry inside each ramekin.

Step 6

Combine spinach mixture with egg mixture and scoop into ramekins.

Step 7

Bake for 45 minutes or until quiche is cooked through. Garish with fresh herbs.
